Springerle
1 dozen eggs
3 lbs. powdered sugar
1 T anise oil
1/2 tsp ammonium carbonate
8 - 10 cups flour
- Beat eggs and sugar for 25-30 minutes at high speed on mixer.
- 10 minutes before the time is up, add anise oil and ammonium carbonate.
- After beating the eggs, add flour until it forms a firm dough.
- Roll dough (pat it out) to 1/2 inch thickness with the springerle rolling pin or cookie press.
- Cut out each cookie and lay it out to dry overnight.
- The next morning, bake at 325° for 10 - 12 minutes.
